Red Lentil Soup

There are different types of lentils and you can mash up the various kinds to give your taste buds some variations. This Red Lentil Soup recipe is combined with capsicum, garlic, cloves to give you a healthy meal option with a variety of nutrients.

  • 1-2 cup veg stock
  • 1/4 cup whole red lentils (Whole masoor),
  • 1-2 garlic cloves sliced.
  • Ground cumin
  • a pinch of salt
  • 1 small red capsicum
  • finely chopped and cayenne pepper
  • in a saucepan.

Method:

  1. Combine 1-2 cup veg stock, ¼ cup whole red lentils (Whole masoor), 1-2 garlic cloves sliced.

  2. Ground cumin, a pinch of salt, 1 small red capsicum, finely chopped and cayenne pepper, in a saucepan.

  3. Reserve some capsicum to garnish. Cook for 15 minutes or until the lentils become tender.

  4. Top with the reserved capsicum just before serving.
